While my daughter and her father have a claimable amount of Irish blood in them, I am Scottish, Welsh, & English, but not Irish (that we know of). So, like most of the rest of the world, I pretend on the 17th of March. I make my American-Irish dinner to the tunes of traditional and modern Irish music all day. Shortly, the New England Boiled Dinner of corned beef, eventually seared in Jameson's & sugar (although, it's not really fully seared), potatoes, parsnips, carrots, onion (forgot the onion!), & cabbage will be in the pot with mustard seed, peppercorns, and bay leaves. Salt, butter, and Italian white balsamic vinegar await the vegetables, and a yummy Maille mustard is set aside for the meat. This will be the last year for this tradition, as we're finally going fully vegetarian for our daughter, who has never eaten meat of any kind. So, it's kind of a mournful dinner because I am, shamefully, a meat addict. I am truly addicted to a good steak and perfect sushi. It's not going to be easy, but surely much healthier and conscience freeing in the long run.
